Jean-Charles Métayer grew up in western France, in a family of restaurateurs. After graduating from culinary school in France, he worked at the Michelin-starred Fleur de Sel in England and later trained under Jacques Le Divellec, one of France’s leading seafood chefs, serving as sous-chef in his two-Michelin-starred restaurant in Paris.
His career has been closely connected with Greece, from Calypso at Peninsula All-Suite Hotel in Elounda to Varoulko, Premiere at the InterContinental Athens, Porto Elounda and Grace Hotel. Le Pavillon in Athens became his own culinary home, created together with his friend and collaborator Angelos Kontaratos.
